No water after coating, but what about dew?

I want to give my car 2 layers of UK and two layers Gliss. But I have no other option than to do it outside. I think the last layer will be done 4-5 hours before the evening dew sets in. Is that enough time to cure to avoid waterspots? The temperature here, is around 8-12 degrees Celcius.
Or should I wait with the Gliss until the next day?

    Dew is water.

I'd keep it dry for the entire "cure time" and wait until the next day to apply Gliss.
